Product profile - Eryngium

Lonely at the top of its stalk you’ll find the Eryngium flower. The colour of the flower is almost metallic and seems to be dyed or painted. The flower has an oval shape and is surrounded by long and spikey silver-green leafs. Some Eryngium varieties are, like you can expect by looking at them, coarse to the touch. But not so much that they are impossible difficult to handle. But there are also some varieties that are surprisingly soft. Curious about this unusual flower? Read along.
 

ORIGIN

Eryngium is also known as sea holly. The plant itself looks like a thistle. The Eryngium has a very large family with over 230 varieties. The biggest part of that family comes from Mexico, South-Brazil and Argentina. In Europe you can find this plant at the Mediterranean area. They like the sunlight and don’t seem to have much trouble with dry conditions.

MYTHOLOGY

In England they used to make some type of candy out of the Eryngium roots. After the roots were peeled and boiled they were cut into strips, these were braided together and covered with sugar. This candy was very popular to trait a cold or a cough with. Another cooking tip: when the roots of (some) Eryngium varieties are boiled or roasted, they taste like chestnuts and are quite nutritious!
